Pumpkins and pumpkins everywhere!

When I first heard about the pumpkins, I thought it was just a little Halloween decoration. I've always thought that pumpkins are a good representation of love and affection, because they come in a multitude of colors. This pumpkin carving makes you feel connected to the energy and love that is around you. And that is a beautiful thing!

Pumpkin carving is a popular activity in our family. We've carved pumpkins for family birthday parties, Christmas, Easter and Thanksgiving. We've even carved pumpkins for our kids' birthdays, because sometimes your kid loves something too much.

We've carved them for special occasions before and they're perfect for a special occasion like our baby's birth or a baby shower. I love these pumpkins because they're fun to eat as a side dish or they can be baked and eaten right out of the oven. You can do both. But the best way to eat them is by carving them. My friend Liza made these pumpkins and they turned out great! My husband had some left over pumpkins and we tried to figure out which ones we wanted. I was hesitant to post these, because of the way the pumpkins looked. The first one was a little rough in texture, but it was not too bad. Then I used my green-screen and it turned out awesome! I made a few adjustments to the recipe in the last few days. The recipe calls for pumpkin puree, which I didn't have, but you can make your own pumpkin puree (although I prefer to do it in the food processor), it is just not necessary. The second version used sugar-free pumpkin pie spice instead of pumpkin pie spice. I think the first time I made it, it was a little spicy. I also added extra ground cinnamon in the second version, which is my personal preference. I found the cinnamon to be more present and more intense. So be sure to get cinnamon. I added 1/4 tsp ground cardamom to the first version, 2/3 tsp ground coriander to the second one, and 1/4 tsp ground nutmeg to the third one. In both versions I used the whole vanilla bean (instead of half and half), which I think makes the creamier and gives it a richer flavor, without the milk-like texture. Also, there's no milk or cream in these! You can use 1/2 cup milk or 1/2 cup whipping cream, but either way works! If you like your cream sweeter, or if you can't find vanilla bean, use vanilla extract, which will add a slight flavor to the cream.
